2006 Cabernet Sauvignon Hopland Ranches 750ml

Grapes: Contento & Feliz Vineyards, Hopland, CA, Mendocino County Harvest: Hand picked six lots totaling 21 tons from September 16th through September 22nd. Degree brix at harvest from 24.7 to 25.8 Production: Morning loads, stemmed and lightly crushed with 50% remaining as whole berries. No SO2 with cold soak for 14 to 72 hours prior to fermentation. Fermented with Syrah, BM-45, and Assmanhausen yeast in both temperature controlled tanks and small one-ton open top tanks, punched down caps by hand and/or pumped over 2-3 times a day. Individual lots remained on the skins from 10-22 days. Pressed to tank, ML inoculated, settled for 24-72 hours, racked to barrels. 50%/50% American and French oak, each lot in 13% new oak, with 60% from Contento and 40% from Feliz Vineyards. Barrel aged for 21 months. Fresh egg white fined. UNFILTERED Bottled: August 2008 1400 cases 13.3% Alc/ 0.66 TA/ 3.49 pH Tasting Notes: The vibrant red cherry fruit and briary spice found in our Feliz vineyard cabernet offers a wonderful accent to the blackberry fruit and dark tea tannins from our Contento cabernet.
