Originally planted in 1978, these old and gnarled vines produce fruit filled with amazing depth and character. The nose shows complex layers of Crème Brule, Apple Pie, and Vanilla Custard with hints of Tangerine, Pineapple and Nectarine.
With 30 tons more fruit than expected, we left it all hanging on the vine until November 30th and hand-selected 6 tons of fruit which had developed botrytis for this special dessert wine. Our fermentation utilized three strains of yeast, each adding a different layer of complexity. Notes of apricot, stone fruits and honey.
Once or twice a decade, when the weather conditions are perfect, Mother Nature allows us to make this special wine.
