Appellation: Napa Valley
Varietal Blend: 100% Syrah
Soil: Alluvial soils, gravelly clay loam with 20% serpentine rock and shale deposits.
Harvest: Manually harvested. Picked at optimum ripeness and hand sorted in small bins.
Technique: The fruit was destemmed and crushed into stainless steel fermentation tanks. Inoculated with Pasteur Red yeast, the wine was pumped over twice daily to facilitate extraction of the rosé color. At which point, the wine was drained from the fermenting Syrah tank, Saignée (French for bleeding) into another stainless steel tank where the wine was fermented cold to preserve the fresh, floral aromatics and delicate flavors.
Aging: Bottled March 12th, 2013.
