Picking/Sorting:
Grapes were handpicked from 50-year-old volcanic, dry-farmed hillside vineyards. Gentle handling and hand sorting of the grape clusters allows only the highest quality fruit to reach the fermentation tank.
Fermentation: Small open top fermenters were used for 5 day cold soaking followed by cultured yeast inoculation and 15 days of fermentation. After the skins were gently pressed, the wine is then settled in tanks for 5 days before being barreled.
Barrels & Aging:
Aged for 22 months in 100% New French Oak Barrels before being bottled.
